For Evelio, the most important thing is to maintain an organic environment - almost artisanal -, where gastronomy mixes the tiny guilty pleasures of life; such as burying your feet in the white soft sand while sipping up a tequila, mezcal or a Pox, which happens to be one of the oldest and most traditional drinks of the Mayan World. Every meal served at Raices, is slowly cooked, in a smoky woodfire the same way it used to be cooked for millen- nials by the Mayan, a heritage that grants every dish a unique Caribbean flavor. One the highlights of this menu is definitely the seafood platter for 2 that is served with lobster, shrimp, squid, crab, fried fish, and even tikin- xic style fish; a definite must to enjoy this great beach venue. Sunsets at Raices are truly memora- ble, every day the sound of a triton conch fills the atmosphere to say farewell to the sun. During weekends there is also a fire show after the conch ceremony.
