Hosted by its owner chef Rosendo Avila “Chendo”, who is also responsible for satisfying the most demanding pal- ates through his dishes. His motto is ... “from the sea to your palate” ... and he lives to make it that way, every morning you will find him with his rod on his boat fishing around the island. Inside the restaurant, a huge and colorful mural with imagery from the Mexican Revolution welcomes its diners, the drinks area is an impressive wood- en bar surrounded by swings which are typical in Holbox and welcome you to sip on a refreshing cocktail. The restaurant’s atmosphere is flooded with aromas from the Caribbean kitchen with slight Mediterranean touches that include seafood, pasta and the true Mexican flavor of a wooden coal grill. The restaurant opens early for bloody marys and then lunch, however the evenings are a bit more crowded with people seeking a perfect dinner with live music by candlelight. Su lema… del mar al pala- dar… y es así, todas las mañanas se le puede encontrar en su lancha por los alrededores de la isla, con su caña listo para pescar. Dentro del restaurante, un enorme y colorido mural alusivo a la revolución mexicana da la bienvenida al comensal, en el área de bar una gran barra de madera rodeada de columpios típico en Holbox invitan a disfrutar de un refrescante cóctel, mientras que en su cocina se respira una colección de aro- mas caribeños con toques mediterrá- neos que incluyen mariscos, pastas y el sabor mexicano cocinado a fuego lento en las brasas. Si bien a bien el restaurante abre desde temprano, la comida y las noches son más concurridas, enmarcando la cena con música en vivo a la cálida luz de las velas.
