I nspired by Mexican home cooking, a peculiar name: Arte Sano, gives birth to a very special place to enjoy Mexican vegan food in Holbox. Its menu includes the classic Mexican food dishes such as tacos, flautas, huaraches, chilaquiles, mole, chiles rellenos, (Stuffed Peppers), and more ... Of course, all vegan and pre- pared from scratch and corn. For Francisco and Jesús -the main chef- the most important thing is fresh food, that is why most of the vegetables served at your table come from small farming communities from the island's surroundings, which support their econ- omy by offering high-quality fruits and vegetables that are served at Arte Sano. "Chilaquiles" stand out, among the spe- cialties and can be served with red or green sauce perhaps Oaxaca style -a mix of beans with spicy chipotle peppers, as well as other delicious specialties like fruit bowls and cereals, lentil or porto- bello burgers, "El Mole" is prepared at home as well as the Stuffed Peppers with Jamaica flower "tinga". In Arte Sano, they never lose the oppor- tunity to recycle, much of their deco- ration comes from local logs and roots that can be found in the area. Definitely an ecological place for vegans and non-vegans. I nspirado en la cocina mexicana hog- areña, nace este peculiar restaurante, su nombre: Arte Sano, un lugar muy especial para disfrutar de comida mexicana vegana en Holbox. Su menú incluye los clásicos tacos, flautas, huara- ches, chilaquiles, mole, chiles rellenos y más… eso sí, todo vegano y preparado desde cero. Para Francisco y Jesús –el chef princi- pal– lo más importante son los alimen- tos frescos, y es por ello que gran parte de los vegetales son traídos de locali- dades cercanas a la isla, donde además de apoyar parte de su economía, obtienen productos de gran calidad. Entre las especialidades destacan los chilaquiles, se pueden escoger con salsa roja, verde o salsa Oaxaca –una mezcla de frijol con chile chipotle–, los bowls de frutas y cereales, las hamburguesas de lenteja o portobello, el mole prepara- do en casa y los chiles rellenos con tinga de flor de Jamaica. En Arte Sano, nunca pierden la opor- tunidad de reciclar, gran parte de su decoración es obtenida a partir de troncos y raíces de la zona.
